Sohan of Qom
Sohan is a saffron brittle made from wheat germ, flour, sugar, butter, egg yolk and cardamom, finished with pistachio and almond. It belongs to Qom, and it has for about a century and a half: the confection is first recorded there in the 1870s, when the city was preparing for a royal visit that in the end sent a deputy instead of the Shah.
Mohammad Sima has been making it since 1972. The recipe has not been industrialised — the wheat is still sprouted, the saffron is still Iranian, and the sheets are still poured and cut by hand — and the range below is the whole of it: flat discs, coins, bite-sized pieces, filled cubes, rolls, and the white pistachio nougat called gaz.

Shelf life and storage
Twelve months from production, in a cool dry place away from direct sun. Sohan is a low-moisture confection and does not need refrigeration; a fridge makes it sweat when it comes back to room temperature.
Allergens
Contains wheat (gluten), egg, milk (butter) and tree nuts — pistachio, almond and, in some products, walnut. Made in a facility that handles all of these.
Halal
All products are halal. No alcohol, no gelatine and no animal fat other than dairy butter is used at any stage.
Export and documents
We ship wholesale orders with a commercial invoice, packing list, certificate of origin and a health certificate from the Iranian Food and Drug Administration. Ask on WhatsApp for the current document set for your country.
